These Pancakes Tho

OH WHAT A GREAT DAY. At work, I work 9 hour days during the week so I can have every other Friday off and today is that Friday. I got to sleep in a little bit, probably going to go for a bike ride today since it’s going to be like 57 and sunny outside, AND I made a bomb-ass breakfast, which I am here to tell you about right now.

There’s this episode of SpongeBob where some jellyfish jelly accidentally gets onto a Krabby Patty. A fish eats said Krabby Patty and starts singing “HEY ALL YOU PEOPLE, HEY ALL YOU PEOPLE, HEY ALL YOU PEOPLE WON’T YOU LISTEN TO MEEEEEEEEEE?? I JUST HAD A SANDWICH, NO ORDINARY SANDWICH… A SANDWICH FILLED WITH JELLYFISH JELLLYYYYYYYY”

Anyway, if you consider yourself a fan of SpongeBob fan AT ALL you will know exactly the song I am referring to. (Here’s the link if you’re a peasant: That’s how I feel this morning. I just made the best (and maybe even healthy) pancakes ever! AND I HAVE TO TELL SOMEONE. There’s a brand of boxed protein pancake mix called Kodiak Cakes. I know, protein pancakes sound kind of gross, and to be honest kind of douchey, but no. This stuff just tastes like normal pancakes.

The normal Kodiak Cakes recipe calls for simply one cup of mix and one cup of water. I’ve made the pancakes like this before and they were pretty good. But today, I decided to mix it up and made the best pancakes ever.

Are you ready?

So the ingredients are just:

1 cup of Kodiak Cakes protein mix

1 cup of unsweetened vanilla almond milk

¾ of a scoop of Quest Banana Cream Pie protein powder

Handful of dark chocolate chips

1 banana

Stir up everything except the banana in a large bowl until the mixture is smooth. Grease a skillet or pan, pour the mixture into whatever sized pancakes you want (I’m not the pancake police). Heat them on medium-high heat for like 3 minutes on each side until they’re done cooking. Top them with a sliced up banana and maple syrup or whatever. This recipe made about 5 smallish pancakes, which was perfect.

They were SO GOOD and banana-y. Honestly, they would still be good with no protein powder, or even another flavored like peanut butter or vanilla powder would be very good too. With the protein pancake mix PLUS the protein powder I think I can expect my 6 pack to come in any day now. Have a lovely Friday!
